Should I rake up the cores when you're done aerating?

You can, but there is some benefit to leaving them on the lawn. Organic matter held in the cores will break down and return to the soil, contributing to the overall fertility of the lawn.

Can I mow after you aerate and overseed?

Sure! The seed isn't going anywhere until it germinates, so consider allowing a day or so for the seed to fall to the soil level naturally and watering first to help hold the seed in place while you maintain the rest of your lawn. The existing grass may help to keep the seed in place, but leaving you grass clippings instead of bagging them may prevent seed loss and damage as well.
